Domesticity takes over

It is such a beautiful day here in the Denver area. As B and I were heading to breakfast this morning, you could see the Rocky Mountains clear as day. I love that! Sometimes people are shocked I don't want to move back to California. The scenery here is a big bonus.

I didn't get as much school related work done this weekend as I wanted (even though as I write this, it's just after 4pm and I have plenty of time to accomplish *something*). When I got off work yesterday, I really couldn't wrap my head around the thought of sitting at my desk and focusing on anti-hypertension. So I made B a mean meal of sirloin and garlic taters. It was so good! And then we just hung out on the couch watching "You, Me and Dupree".

Today I made my first batch of freezer jam - raspberry as you can see from the photos. My mom made jam from scratch when we were kids. Honestly, until I met B, I had never tasted jam or jelly from the store. I can see why. I tried freezer jam first because with school, I don't think I have time right now to master canning. Maybe over Christmas break? I remember my mom heating her batches of freezer jam, even for a little while. The instant just requires that you mash fruit, add the sugar mixed with the pectin. It tastes great, but I'm waiting for it to set up more. I already had PBJ with it and was pleased. Hopefully it firms up a bit more. I pulsed the berries in my little food chopper, but kept it pretty chunky. I saved about a quarter of the whole berries to mix in as well.

This afternoon we drove to Westminster to pick up a wine fridge. We got one heck of a deal. B has been collecting wine for some time and some of our reds aren't really ready to drink, but our apartment is too warm to keep them at the temp they should be stored. Now we're just trying to figure out where to put it. It sticks out much further from the wall that I originally thought.

This week is going to be incredibly hectic. I'll do my best to stay afloat. :)

I won't be in school forever...

...or will I? Let me start out by saying that my husband is AH-mazing. He really should receive a gold star, cupcakes and a parade. He has been my rock since I started back to school, which I should add has been over six years at this point. I'm in my second year (of four) in my program and things are already zooming on by. Sometimes I'm pretty bothered by how much I need to focus on school. Don't get me wrong -- I love what I'm studying! And I know I'm on the downward slope. My point? B and I were planning on heading up to Vail or Aspen to see some of the fall colors in a few weekends. It's still warm in Denver (well warmer than last year around this time) and I thought we had more time. I received a few texts and pics from my buddy A today as she drove up through the mountains to visit her family this weekend showing me that the leaves are already changing. ::sigh:: I have to work my intern shift at the hospital tomorrow and will need to spend Sunday getting caught up on studying and preparing for the next week. We're going to a hockey game the weekend after next (Let's go Avs!!) and the week after that? Two beefy exams. I have a lot I need to do. Ugh. Can't really pencil in a trip to Vail or Aspen to sight-see. I find myself dreaming of lazy mornings with B, drinking coffee and reading the paper at the kitchen table... and not flipping through my planner to see if I can spend time with him :(
